Rainbow Trout mature at around the age of 5 years and have been known to live for up to 11 years.

The color of Danish Rainbow Trout Caviar is clear pastel orange orb with a bright tangerine orange “iris”, similar to that of Salmon Caviar. High-quality trout caviar should have lucidity of perfectly bright, shiny, fresh, great light refraction. Although the roe are smaller (3.5-4mm) than those of Salmon, Rainbow Trout Caviar has a well-defined texture and a bolder, richer taste. It smells like sea breeze with a hint of stone fruitiness.
