Osetra Sturgeon Caviar, also known as Asetra Sturgeon Caviar, is derived from the row of the Osetra Sturgeon and is one of the most expensive and favoured caviars around the world, alongside Beluga Sturgeon Caviar. Ossetra, Osetra or even Asetra is simply the Russian term for Sturgeon and at one time “ossetra” simply referred to Russian Sturgeon species harvested for this type of caviar. The Osetra Sturgeon can live up to 50 years of age and range in weight between 50 to 400 pounds. The colour of Osetra Sturgeon Caviar can vary from warm brown to a greenish-gray or black.
In comparison to the Blegua Sturgeon, and Beluga Sturgeon Caviar, the Osetra Sturgeon is much smaller in size and the Caviar of the Osetra Sturgeon has a firmer texture than that of the Belgua Sturgeon. Osetra Caviar is said to have a rich, nutty flavour and a firm bead with “Golden Osetra” being one of the rarest forms of Osetra Caviar and is golden-yellow in colour with a rich flavour.
Due to the fact that the Caspian Ossetra, or Asetra Sturgeon is nearing extinction, farming of this particular Sturgeon is the only way to continue large scale production of such a fine delicacy.
