Keta Salmon Caviar consists of the roe of the Alaskan Chum Salmon (Oncorhynchus Keta), also known as the Keta Salmon or the Dog Salmon. The Chum Salmon gets it’s name from a Chinook word “tzum”, which means “spotted” or “marked”. The Keta Salmon is silvery blue-green in colour and when the adults are near spawning they have purple markings near their caudal fin. The Keta Salmon have been known to travel more than 3,000 km up the Yukon Rive to spawn and the female can lay up to 4000 eggs. Keta Salmon, mature by 5 years of age and live for around 7 years and weigh, on average, between 6 and 17 lbs.
As the most popular type of Salmon Caviar, Keta Salmon Caviar has bright, red-orange extra large, firm grains, with a sweet, refreshing flavour. Alaskan Salmon Caviar is very high on lean protein and Omega-3 fatty acids. High grade Keta Caviar can have a bead diameter larger than 5mm, has a longer shelf life than many other Caviars, and can be suitable for freezing if done correctly.
